For cornbread without yeast we will need:

  • 2 cups corn flour;
  • 1 cup wheat flour;
  • 2 tsp baking powder;
  • 1/3 cup vegetable oil;
  • 2 tbsp. sweet syrup;
  • 2 cups almond (or other vegan) milk;
  • 2 tsp lemon juice or apple cider vinegar;
  • 1/2 tsp. salt.

According to American tradition, we start by mixing all the dry ingredients: two types of flour, baking powder and salt.

Now it's time for the liquid components. Mix almond milk with lemon juice, add butter, syrup and mix well again.

We combine the first with the second: pour the resulting oil mixture into the corn-wheat mix. The result is a cornbread batter that's unexpectedly runny, like pancake batter. It's OK. Everything is going as it should :))

Lightly grease a bread pan or multicooker bowl with oil and pour the dough into it.

The oven recipe calls for the cornbread to spend 30-40 minutes in the oven at 180°C. It took 65 minutes to cook in my slow cooker. No matter how many minutes there are, sooner or later they will expire.
